Muttayum Kaayayum Varuthathu (Egg - Plantain Fry)



Ingredients
  1. Plantains               - 2 large (chopped into small pieces)
  2. Eggs                      - 2
  3. Grated coconut      - 3 tbsp
  4. Sugar                     - 3 tbsp
  5. Ghee                      - 2 tsp
  6. Cardamom             - a pinch
  7. Cashews                 - 4 (slit)
  8. Raisins                    - 6


Preparation
  1. Heat ghee in a sauce pan.Roast the cashews and raisins.
  2. Add chopped the plantains and saute for a few minutes.
  3. Sprinkle in the sugar and cook until the plantains are soft .
  4. Add the grated coconut and cardamom powder and saute this for another 2 minutes.
  5. Break in  the eggs and scramble it.
  6. Cook for another 3 minutes and switch off the flame.
  7. Serve warm with a cup of tea.
