Tomato Soup

Tomato soup is an easy and healthy soup that we can make with ingredients that you have at home.The primary ingredient of this soup is tomato but to  adjust the tangy taste of tomatoes, we are adding a small quantity of carrot also.It can be made in a variety of ways like removing the skins or without removing, clear soup or thick soup, by adding fresh cream or without adding etc.I made this without removing skin and not adding fresh cream by giving a smooth thick consistency.This soup can be topped with fresh cream or croutons.Croutons are just crispy bread pieces tossed well with oil or without oil.

Ingredients
  1. Tomato - 5 large nos ( chopped)
  2. Carrot - 1 small (chopped)
  3. Onion - 1 medium (sliced)
  4. Celery - 2 tbsp (chopped)
  5. Garlic cloves - 6 nos ( chopped)
  6. Pepper corns - 6 nos
  7. Bay leaf - 1 
  8. Sugar - 1 tsp
  9. Crushed Pepper powder - 1/2 tsp
  10. Bread slices - 2
  11. Salt - to taste
  12. Butter - 2 tbsp
  13. Olive Oil - 1 tbsp
Preparation
  1. Heat butter in a pan and add bay leaf and onion.
  2. Saute for 2 minutes and add celery, carrot, garlic and mix well.
  3. Add chopped tomatoes, salt and peppercorns.
  4. Close the lid and cook tomatoes by adding 2 cups of water.
  5. We can also pressure cook these ingredients.
  6. when the tomatoes are done, remove the water by using a strainer.
  7. Grind this tomato mixture with 1 cup water by removing the bay leaf.
  8. Add these to a thick bottomed pan with strained water.
  9. Adjust salt and add sugar, crushed pepper powder and cook for another 5 minutes.
  10. To get a smooth consistency, strain this mixture and keep this strained soup on the flame.
  11. You can adjust the thickness of soup at this stage.Those who wants the soup to be thick, mix 1 tbsp cornflour with little water and add this to the soup.
  12.  Mix well for a minute and switch off the flame.Soup is ready.
  13. Cut bread slices into small square pieces.
  14. Heat olive oil in a pan and toss these bread pieces till crispy.
  15. These are called croutons.
  16. Garnish tomato soup with croutons.
