Fruit Cake


Fruit cake is a mouthwatering cake which is soft,fluffy and easy to make.I made this cake with  raisins,tutti fruitti,dates,walnuts and cashews.we can use any combination of dry fruits,nuts and tutti fruitti.Try baking in a loaf pan.






Ingredients

  1. All purpose flour          - 125 gms
  2. Sugar                            - 125 gms
  3. Butter                           - 125 gms
  4. Eggs                             - 2
  5. Vanilla essence            - 2 tsp
  6. Baking powder            - 1 tsp
  7. Baking soda                 - 1 tsp
  8. Dry fruits                     - 150 gms
  9. Cashews                       - 5

Preparation

  1. Sieve flour, baking powder and baking soda.
  2. In a mixing bowl, bring together butter and sugar, whip until a smooth paste appears.
  3. Add eggs one by one and whip the mixture with each addition.
  4. Add the vanilla essence.
  5. Now incorporate the flour little by little in the batter and blend until a smooth dough is formed.
  6. If you find your dough to be too tight loosen it by adding 1 to 2 tablespoon of milk in it.
  7. Add dry fruits in the batter. fold it.
  8. Preheat oven at 180 degree.
  9. Line your baking tray with butter and flour or butter paper.
  10. Pour batter to the tray.On the top of batter sprinkle cashews.
  11. Bake your cake at 180 degree C for 55-60 minutes.
