Unniyappam

This is Unniyappam, one of the best snacks of Kerala. The name itself or the picture below will definitely take every Keralites to nostalgic memories. We have a neighbour back in Kerala, an old lady living alone. We call her chechi. Whenever we go home for vacations, the very next day morning we can expect her with some very delicious Unniyappams. This is still continuing.Unniyappam is made in many ways and some people use Atta instead of maida and rawa.But the basic ingredient is a mixture of  rice flour with jaggery and grated coconut.





Ingredients


  1. Rice Flour/Raw Rice            -   1 cup
  2. Maida                                    -   1/4 cup
  3. Rawa                                     -    2 tbsp
  4. Ripe banana                           -    2
  5. Black sesame seeds               -   1 tbsp
  6. Grated jaggery                       -   1 1/2 cup
  7. Cardamom powder                -    1 tsp
  8. Baking soda                           -    a pinch
  9. Jeera powder                          -    1/2 tsp
  10. Thin coconut slices                -    3 tbsp
  11. Ghee
  12. Oil


Preparation
  1. If using raw rice, clean and soak in cold water for 2 hours.Wash and drain. Pound it to a fine powder.
  2. Mix rice flour,maida,rawa,cardamom powder,jeera powder and baking soda.
  3. Melt grated jaggery in 1/4 cup water.
  4. Pour the hot melted jaggery to the powder mix.
  5. Mash banana and mix it well with the batter.
  6. Heat ghee in a pan and fry coconut slices till it turns light brown.
  7. Add this coconut slices and sesame seeds to the batter.
  8. If the batter is too thick, add 1/4 cup of hot water.
  9. Keep aside for 1 hour.
  10. Heat the oil in an unniyappam pan.
  11. Pour the batter into each mould(fill only 3/4 of the mould).
  12. Cook on a low heat till both sides are done.
