Tapioca Stew

Tapioca(cassava roots)is enjoyed througout the world due to its unique composition of carbohydrates,minerals,vitamins and organic compounds.Some of the health benefits of tapioca include its ability to help in healthy weight gain,improve digestion,prevent diabetes,lower cholesterol and many  more.In kerala tapioca is known as kolli,kappa,marchini etc.Tapioca has a unique and delicious flavour and is prepared in many ways in kerala - Kappa puzhughiyathu(boiled tapioca),Kappa biriyani,Kappa masala,in curries and stews,as chips and papads.This is a dish that can be used as a evening snack with tea or it can be had as a filling breakfast dish as well.Try this dish with a cup of hot glass of black Tea.


Ingredients

  1. Tapioca                    -   2 medium(cut into small pieces)
  2. Turmeric                  -   a pinch
  3. Salt                           -   1 tsp
  4. shallots                     -   4 (coarsely chopped )
  5. Mustard seeds          -   1/2 tsp
  6. Dry red chilly           -   1-2
  7. Curry leaves             -   1 stem
  8. Coconut oil               -   1 tbsp  
Preparation
  1. Cook the cubed tapioca with just enough water with salt and turmeric.
  2. Cook until soft and no water.
  3. Heat the oil in a kadai and add mustard seeds.
  4. when mustard seeds pop,reduce heat , add the curry leaves,shallots,dry red chilly.
  5. Stir  for a few seconds and add cooked tapioca into this.
  6. Stir well until all ingredients are mixed.
  7. Serve hot by itself or with other dishes.
