Poha

Ingredients Poha(flattened rice)                -    2 cups Onion                                     -    1 (finely chopped) Carrot                                     -    1 (grated) Boiled Green peas                  -     1/2 cup Roasted Peanuts                     -     2 tbsp Green chilli                             -     1 (chopped) Mustard seeds                         -     1 tsp Turmeric powder                    -     1/4 tsp sugar                                       -     1 tsp salt                                          -    as required Oil                                           -    2 tbsp Lemon juice                            -    optional Curry leaves                            -    for garnishing         Grated coconut                        -    for garnishing  Preparation Rinse the poha in water until they become soft. Add  sugar, salt and turmeric powder to the poha and mix well. Heat oil in a pan and crack mustard seeds.Add on

Muffin

Muffin is similar to a cupcake in size and cooking methods.Muffin cups or cases are used in the baking of muffins for the easy removal of the finished muffin from the tin .Overmixing the batter  can cause the muffins to be dry or hard. Ingredients Butter                   -  100 g Flour                    -  100 g Castor Sugar        -  100 g Egg                       -  1 Vanilla Essence    -  1tsp Baking Powder     -  1 tsp  Preparation Sieve the flour and the baking powder. Cream the butter and the sugar till light and fluffy. Lightly beat the eggs. Fold in the sieved flour. Line the cupcake moulds with liners. Pour the batter in the cupcake moulds. Bake in preheated oven at 180 degree centigrade for 20 to 25 min.

Split Cake / Vettu Cake

Ingredients All purpose flour / Maida - 1 + 1/8 cup Egg - 1 (I took Duck egg) Baking Powder - 1/2 tsp Sugar - 1 cup ( can adjust according to your taste ) Cardamom powder - 1/4 tsp Nutmeg powder - 1/8 tsp Oil - For frying Preparation In a bowl, mix maida, Cardamom, nutmeg, baking powders. Beat egg and sugar in another bowl. When it is slightly beaten, add the flour mixture to form a smooth dough like that of chapati.You can adjust the flour amount to get a smooth dough. Keep this dough for 40 minutes. When ready to fry, heat 2 cups of oil in a deep thick bottomed pan. Shape the dough into a log and press all the sides to get a long rectangular shape. Cut them into triangle pieces.Make a deep cut in the centre. Fry them in medium heat for 4 minutes, flipping them in between to ensure uniform cooking. Make sure that oil is not too hot, otherwise outer part gets burnt earlier leaving inner dough uncooked. Once they are cooked remove this from oil using slott
