Squid Roast (koonthal / Kanava / Calamari Roast)

Image
Koonthal or Kanava is one of the favourite fish of seafood lovers around the world. The rich proteins, vitamins and mineral content in squid make them healthy too. Koonthal is called Squid in English and when it considered in continental style, it is called Calamari which is an Italian name. Like other fishes, we can make various dishes with this. Koonthal roast is the best in those. I prefer to make roast whenever I get good prawns, squid or mussels (Kallummakkaya). The gravy of this dish is so good with anything like rice, chapati or any sort of bread.  Ingredients Squid                             -  1/2 kilo ( can cut in any desired shape, here i cut it into rings) Shallots                          -  1 cup Ginger-garlic  paste       -  2 tbsp Red chilli powder          -  1/2 tbsp or as per your spice level Black pepper powder     -  1/4 tbsp  Turmeric powder           -  1/2 tsp Cumin seed powder       -  1/4 tsp Coriander powder          -  1 tbsp Water

All of us used to make Italian food. Pizza and Pasta are favorites of our kids. But either we make instant pasta or easy pizza, very rarely try the genuine Italian style. There is very few tasty original Italian pasta which may be difficult to make and find the ingredients. Here I am going to show you one of those, Spaghetti with Meatballs. I tried this once from an Italian restaurant when I was in Singapore. If you can make it with correct ingredients, measurement, and  nice presentation, no one can avoid having it. Ingredients Meatballs Minced meat                         :½ Kg (Beef or mutton – Be sure that this does not contain meat skin) Bread crumbs                        : 1 cup Parmesan cheese                   : 1 table spoon (If parmesan cheese is not available, you can use cheddar cheese) Dry parsley                             : 1 table spoon Ground black pepper              : ½ teaspoon Garlic powder                         : ½ teaspoon Egg

Malabar Prawns Biryani

Image
Biryani is familiar to all. Chicken biryani, mutton biryani, Hyderabadi, Mughlai, Malabari etc. But fish biryani is not common. If you look at the menu in any restaurants, It may be available in very limited restaurants, and moreover if its that of prawns. I used to try different types of fish biryanis but mainly with kingfish (Ayakkora / Surumai) or prawns, that too with differently sized prawns. What my finding is, it is always good to make biryani with medium sized prawns. Here I tried with tiger prawns.   Ingredients For masala Prawns                      -  1 kilo Onion                        -  7 nos Tomato                      -  4 nos (if large, take 3 nos) Green chillies            -  10 nos Ginger paste              -  2 tbsp Garlic paste               -  2 tbsp Red chilly powder     -  3/4  tbsp Garam masala           -  2 tsp Curd                          -  3 tbsp Cinnamon                 -  2 pieces Cloves                       -  3 nos Lemon

Goan Fish Curry

Image
whenever I go anywhere, my first objective is to explore the taste there. Especially when in leisure trips.  Goa is a world famous tourist place. The beautiful beaches are the main attraction there but for me, important thing is Goan food. It has a genuine style and taste. The main item in those is the simple but delicious Goan fish curry rice. Goan fish curry is a simple curry made with coconut masala paste and had a spicy, tangy taste. It is good with plain boiled rice and bhakri (rice chappathi).    Goan fish curry can be made with any sea fish like Tuna, King fish (Ayakkora / neymeen / Suramai), Pomfret, Prawns etc. Here I have used another fish called Rawas. This is a very tasty fish usually found in Maharashtra and Gujarat only. Rawas is also known as Indian Salmon.I don't know what it really called in English or Malayalam but one thing is sure, this is tastier than other fishes mentioned above from  my experience.  Ingredients     .

Idli Manchurian

Image
We are very familiar with Idli, one of the famous breakfast item from South India. Nowadays, Idli is famous not only in South India but is common all over India. But the recipe I shared here is very rare. A normal south Indian item in Chinese style. Actually I saw this in a normal restaurant menu in Andheri and tried it. It was not that good in taste and appearance but I got the idea to have a try. Thus I made it. For preparing, it is better to have mini idli mould. If you don't have mini idli mould, you can cut the normal size idlis into small pieces and make it. If I am not wrong, most of the kids do not like idli but believe me, your kids will love this, especially if you make this colourful with different coloured capsicum.    Ingredients Mini Idli                                       -   20 nos. Onion(finely chopped)                 -   1 no capsicum(cut into squares)      -   1 1/2 (I took half part of green, red and yellow capsicum) Garlic(finely chopped
