Caramel Custard Pudding | Vanilla Pudding

Ingredients  1   Milk                             -    2 cups 2   Sugar                           -    1/2 cup 3   Egg                              -    5 nos. 4   Vanilla essence            -    1 Tsp  5   Sugar for caramelising-    3 Tbsp Preparation Beat eggs with vanilla essence and sugar. Add beaten egg mixture to milk and mix well. Heat pudding tray and add 3 Tbsp of sugar to this. Take care to heat on low flame until the sugar caramelises.  When the tray becomes cool, pour in the pudding mixture into it. Place some water in a steamer and one metal bowl upside down  Over this, place the pudding tray to be steamed and cover it with a metal plate. Cover the steamer with a lid and cook for about 25 minutes. When its cool, refrigerate this. When its done, flip it upside down onto a serving plate.

Mutta Marichathu ( Egg Cake )

Mutta marichathu or Egg cake is a sweet snack from Malabar.It is a very easy snack and needs little time.Also called  kayappola in some areas.we can also make this by adding fried plantains (nendran) to the egg mixture.I made a slight modification by not adding that.Kids would love this and it is very good for them. Ingredients Eggs                            5 large Sugar                           6 tbsp   Cardamom powder    3/4 tsp Ghee                           1 tbsp   cashew nuts              8 (crushed) raisins                        8   Preparation In a bowl add eggs, sugar and cardamom powder & beat well. Heat a small non-stick heavy-bottomed saucepan or pressure cooker and add 1 tablespoon ghee to it. Swirl the saucepan and spread the ghee on all sides. Add cashew nuts and  raisins.Saute until the raisins are puffed up and cashews are slightly brown. Pour the mixture in the bowl into the saucepan. Reduce the heat to low and cook covered for

Samosas, most popular street food in india of all time.It is one of my favourite snacks. It can be made with endless variations on fillings to suit your tastes.Punjabi samosa is large in size and its filling is made up of potatoes and peas.We can also buy samosa sheets from outside to make it easier. Ingredients Samosa Filling Chicken                                    500 g Large Onions                            2 Ginger                                      2 tsp (finely chopped) Garlic Clove                              4 (finely chopped) Green chillies                            3 (finely chopped) Coriander leaves                       1/2 cup (finely chopped ) Ground pepper                          2  tsp Garam masala                          2  tsp Red chilli powder                   1 tsp Vegetable oil                             2-3 Tablespoons Salt                                            as required Samosa Cover Dough All purpose flour      

Red Fish Curry ( Meen Mulakittadhu)

Ingredients 1. Fish-medium size pieces         -    500 gms 2. Mustard seeds                          -    1/4 tsp 3. Fenugreek seeds                       -   1/4 tsp 4. Curry leaves                             -    2 sprigs 5. Shallots(sliced)                        -    4 to 5 nos 6. Ginger(crushed)                       -    1.5 tsp 7. Garlic(crushed)                        -    1.5 tsp 8. Kashmiri chili powder             -    1.5 to 2 tbsp( depends upon the spice level) 9. Coriander powder                    -    1/2 to 1 tbsp 10. Turmeric powder                    -    1/2 tsp 11. Fenugreek powder                  -    1 pinch 12. Kudampuli (Gambooge)         -     2 to 3 small pieces (soaked in hot water) 13. Water                                      -     1 cup   14. Thari pola (Semolina Cake)

Thari pola is a special malabar dish which is almost similar to rawa cake.It is a very easy cake that can be made without oven and with a little time. Ingredients Semolina                   -  1/2 cup Eggs                          -  4 Sugar                         - 5-6 tbsp Cardamom powder   -  1 Tsp Ghee                          -  2  Tsp Cashew nuts               - 5 Raisins                        - 8 Preparation In a pan roast semolina for 3-4 minutes at low flame and let it cool. Mix egg, sugar and cardamom powder in a bowl. Beat it with a mixer till fluffy. Add fried semolina in small quantity at a time and fold in. Add 1 tsp ghee and mix well. Heat pressure cooker over a low flame and add 1 tsp ghee. Pour semolina - egg mixture into it and close the lid without weight. After 3 minutes open the lid and add cashews & raisins. Keep this in low flame until steam comes out through the nozzle or insert a toothpick and check it comes out clean.

Methi Mutter Masala

Methi Mutter masala is a common name for my friends in North india.But for those who are from kerala,Tamil Nadu & all, this name may be unfamiliar.Methi is nothing but uluva cheera and mutter is  green peas , so the name methi mutter masala. I ngredients Onion                           -  3 nos Tomato                         -  4 nos Garlic                           - 5 pods Methi leaves                 - 2 1/2 cups Green peas                    - 1 cup cashews                         - 10 nos cumin seeds                   - 1 tsp chilli powder                 - 1/2 tsp Coriander powder          - 1 tsp Garam masala                 - 1/2 tsp Cumin powder                - 1/2 tsp Oil Butter Preparation Heat 2 tsp oil and 1 tbsp butter in a pan.when it melts, add cashews. When cashews become brown in colour , add cumin seeds and let it sizzle. Add chopped onions and garlic into it.Saute till it browns. Add chopped tomatoes into it and saute till it
