Poha


Ingredients
  1. Poha(flattened rice)                -    2 cups
  2. Onion                                     -    1 (finely chopped)
  3. Carrot                                     -    1 (grated)
  4. Boiled Green peas                  -     1/2 cup
  5. Roasted Peanuts                     -     2 tbsp
  6. Green chilli                             -     1 (chopped)
  7. Mustard seeds                         -     1 tsp
  8. Turmeric powder                    -     1/4 tsp
  9. sugar                                       -     1 tsp
  10. salt                                          -    as required
  11. Oil                                           -    2 tbsp
  12. Lemon juice                            -    optional
  13. Curry leaves                            -    for garnishing        
  14. Grated coconut                        -    for garnishing 
Preparation
  1. Rinse the poha in water until they become soft.
  2. Add  sugar, salt and turmeric powder to the poha and mix well.
  3. Heat oil in a pan and crack mustard seeds.Add onion to this and saute it.
  4. Add curry leaves, green chillies and vegetables(can add vegetables of your choice).
  5. Saute till the vegetables are cooked.
  6. Now add the roasted peanuts, poha  and stir.
  7. Cover and steam the poha for 2-3 minutes on low flame  and stir in between .
  8. Sprinkle some lemon juice, coriander leaves and grated coconut.
  9. Serve with a cup of hot tea.
