Thari Kanji / Semolina kheer



Ingredients

  1. Roasted Rava (semolina) - 1/2 cup
  2. Vermicelli - 1 cup
  3. Milk - 1 liter
  4. Coconut milk - from 2 coconuts
  5. Sugar - 1/2 cup
  6. Shallots - 4-5 nos (finely sliced)
  7. Nuts & raisins - 2 tbsp
  8. Ghee - 1 tbsp
Preparation
  1. Boil milk in a thick pan. Keep this aside.
  2. Take first and second milk from 2 coconuts.
  3. Cook semolina and vermicelli in the second coconut milk.
  4. Cook for 7 - 10 minutes on medium flame and stir it occassionally.
  5. Add boiled milk and adjust the consistency.The consistency of thari kanji should not be either thick or runny.
  6. Lastly, add first milk of the coconut and do not let to boil.
  7. Switch off the flame.
  8. Heat ghee in a small pan and fry nuts, raisins and shallots.
  9. Pour this tempering on the milk mixture.
Note: 
  1. Add more rava for adjusting the thickeness of the kheer.
  2. We can substitute coconut milk with milk also.
