Thari Kanji / Semolina kheer
Ingredients
- Roasted Rava (semolina) - 1/2 cup
- Vermicelli - 1 cup
- Milk - 1 liter
- Coconut milk - from 2 coconuts
- Sugar - 1/2 cup
- Shallots - 4-5 nos (finely sliced)
- Nuts & raisins - 2 tbsp
- Ghee - 1 tbsp
- Boil milk in a thick pan. Keep this aside.
- Take first and second milk from 2 coconuts.
- Cook semolina and vermicelli in the second coconut milk.
- Cook for 7 - 10 minutes on medium flame and stir it occassionally.
- Add boiled milk and adjust the consistency.The consistency of thari kanji should not be either thick or runny.
- Lastly, add first milk of the coconut and do not let to boil.
- Switch off the flame.
- Heat ghee in a small pan and fry nuts, raisins and shallots.
- Pour this tempering on the milk mixture.
Note:
- Add more rava for adjusting the thickeness of the kheer.
- We can substitute coconut milk with milk also.
