Aval Varuthathu (Sweet Rice flakes fry)

Ingredients
  1. Aval (Beaten brown Rice flakes)         -  1 kilo
  2. Grated Coconut                                  -  5 cups
  3. Sugar                                                  -  1/2 kilo
  4. Ghee                                                   -  150 g
  5. Cashew nuts                                       -  100 g
  6. Raisins                                                -  100 g
  7. Shallots (thinly chopped)                     -  8 nos
  8. Cardamom powder                             -  1 tsp
Preparation
  1. Heat ghee in a thick bottomed pan, add chopped shallots, cashews, raisins and fry it till golden brown.
  2. Add rice flakes to this and dry fry till crispy.
  1. Remove this from pan and add grated coconut, cook on low flame.
  2. After 2 minutes, add sugar and stir continuously.Add cardamom powder and mix well.
  3. When the coconut gets mixed with sugar and gets dry, add the roasted rice flakes.
  4. Mix all well and sweet rice flakes fry is ready.
