Egg Roast (Kerala style)


Ingredients
  1. Egg - 4 nos
  2. Onion - 3 nos (thinly sliced)
  3. Tomato - 1 big (thinly sliced)
  4. Green chilli - 2 nos (finely chopped)
  5. Ginger - garlic paste - 1 tbsp
  6. Kashmiri chilli powder - 1 tbsp
  7. Turmeric powder - 1/2 tsp
  8. Coriander powder - 1 1/2 tbsp
  9. Garam masala - 1 tsp
  10. Curry leaves - few
  11. Coriander leaves - 1 tbsp
  12. Coconut oil - 2 tbsp
Preparation
  1. Boil eggs, remove shells and make a small cut on sides to get masala inside.
  2. Take a Kadai, pour coconut oil and add curry leaves, sliced onions.
  3. Saute it for 3 minutes. Add ginger - garlic paste, green chillies, tomatoes and mix well.
  4. When oil starts to separate, add all spice powders.
  5. Toss well till the raw smell of spice powder goes.
  6. Adjust salt and add water to the consistency of gravy needed.
  7. When gravy starts to boil, add boiled eggs.
  8. Cover and cook for another two minutes.
  9. Switch off the flame and garnish with coriander leaves.
  10. Serve with Appam, chapati.
