Vegetable Hakka Noodles
Ingredients
- Noodles - 350 g
- Onion - 1 (thinly sliced lengthwise)
- green chilly - 1 (finely chopped)
- Garlic - 4 cloves (finely chopped)
- Carrot - 1 (thinly sliced lengthwise)
- Cabbage - 1/2 cup (chopped lengthwise)
- Capsicum - 1/2 cup (sliced lengthwise)
- Spring onion - 3 - 4 (finely chopped)
- French beans - 1/2 cup (sliced lengthwise)
- Soya sauce - 1 tbsp
- Red chili sauce - 1 tsp
- Vinegar - 1 tsp
- Pepper powder - 1/2 Tsp
- Salt - to taste
- Oil - 2 tbsp
Preparation
- Cook noodles as per instruction in a packet with 1/2 tsp of oil.
- Heat oil in a wok and add garlic pieces, chopped onions, green chilly.
- After one minute, add all vegetables with little spring onion left for garnishing.
- Mix well by adding salt and pepper powder.
- Saute for three minutes and add soya sauce, red chili sauce, vinegar.
- Add cooked noodles and adjust salt.
- Toss well to mix the vegetables with noodles for two minutes.
- Garnish with spring onion and serve with schezwan chutney.
