Chicken Bhuna Masala || Bhuna Chicken
Ingredients
- Chicken - 500gms
- Onion(small) - 4 nos (finely chopped)
- Tomato(small) - 4 nos (puree)
- Ginger-garlic paste - 3 Tbsp
- Green chilli - 3 nos (finely chopped)
- Lemon juice - 1/2 Tbsp
- Cashew - 8 nos
- Bay leaf - 1
- Cloves - 4 nos
- Anise star - 1
- Cinnamon - 1 small piece
- Cumin seed - 1/4 Tsp
- Cardamom - 2 nos
- Red chilli - 3 nos
- Fennel seed - few
- Chilli powder - 3/4 Tbsp
- Kashmiri chilli powder - 1/2 Tbsp
- Coriander powder - 1 Tbsp
Preparation
- Marinate cleaned chicken pieces with 1 1/2 Tbsp of ginger-garlic paste, 1/4 Tbsp of red chilli powder, 1/2 Tbsp of Kashmiri chilli powder, 1/2 Tbsp of coriander powder, 1/2 Tbsp of lemon juice.
- Keep it aside for 30 minutes - 2 hours.
- Now we can dry whole spices like cinnamon, cumin seeds, dried red chilli, cardamom, cloves and star anise.
- Grind this whole spices to fine powder.
- Soak cashews in water and grind to a smooth paste.
- Sauté chopped onions in hot oil till it becomes translucent.
- Add 1 1/2 Tbsp of ginger-garlic paste, 1/2 Tbsp of coriander powder & 1/2 Tbsp of red chilli powder.
- Sauté till the raw smell of the masala is gone.
- Add tomato puree, chopped green chillies, bay leaf and salt.
- Add ground whole masala and marinated chicken pieces.
- Finally add cashew paste, 1.5 cups of water and cook for 3 whistles.
- When the steam is gone, add kasuri methi, black cumin & cumin seeds.
- Chicken Bhuna Masala is ready to serve with Naan, chapatti or paratha.
