Vegetable Pulao
Ingredients
- Basmati Rice - 500 gms
- Ghee - 150 gms
- Carrot - 1 cup (finely chopped)
- French beans - 1 cup (finely chopped)
- Green capsicum - 1/2 cup (chopped)
- Cauliflower - 1 cup (chopped)
- Tomatoes - 1 cup(chopped)
- Green peas - 1/2 cup
- cardamom - 4 nos
- caraway seeds(jeera) - 2 tsp
- Bay leaf - 3
- cinnamon - 2
- cloves - 2
- Mace - 1 tsp
- Salt
- cashewnuts - 1 cup (fried)
- Raisins - 2 tbsp
Preparation
- Cook the basmati rice with 2 cups of water for 1 cup of rice.
- Cool and divide into 2 equal portions.
- Heat a kadhai, add 100 gm of ghee , add the caraway seeds, bay leaves, mace, cinnamon, cloves and cardamom mix well and saute on a medium flame , till it turns golden brown.
- Add the vegetables(you can add vegetables of your choice) and salt, mix well and saute on a medium flame for 2 minutes.
- Remove from the flame, cool and divide this mixture into two equal portions and keep aside.
- In another broad pan , spread a portion of rice and a layer of masala on top of it.
- Repeat the same step once more.
- Pour the rest of ghee on top of this.
