Vegetable Pulao



Ingredients

  1. Basmati Rice                    -    500 gms
  2. Ghee                                 -    150 gms
  3. Carrot                               -    1 cup (finely chopped)
  4. French beans                    -    1 cup (finely chopped)
  5. Green capsicum                -   1/2 cup (chopped)
  6. Cauliflower                      -    1 cup (chopped)
  7. Tomatoes                         -    1 cup(chopped)
  8. Green peas                       -    1/2 cup
  9. cardamom                        -    4 nos
  10. caraway seeds(jeera)       -    2 tsp
  11. Bay leaf                            -    3
  12. cinnamon                         -    2
  13. cloves                               -    2
  14. Mace                                - 1 tsp
  15. Salt
  16. cashewnuts                      - 1 cup (fried)
  17. Raisins                             - 2 tbsp

Preparation
  1. Cook the basmati rice with 2 cups of water for 1 cup of rice.
  2. Cool and divide into 2 equal portions.
  3. Heat a kadhai, add 100 gm of ghee , add the caraway seeds, bay leaves, mace, cinnamon, cloves and cardamom mix well and saute on a medium flame , till it turns golden brown.
  4. Add the vegetables(you can add vegetables of your choice) and salt, mix well and saute on a medium flame for 2 minutes.
  5. Remove from the flame, cool and divide this mixture into two equal portions and keep aside.
  6. In another broad pan , spread a portion of rice and a layer of masala on top of it.
  7. Repeat the same step once more.
  8. Pour the rest of ghee on top of this.
