Panineer Petti / Egg - Rose water Box


Ingredients

For pancake

  1. Maida - 1 cup
  2. Egg - 1
  3. Salt - a pinch
  4. Water - required to make a loose batter
For filling
  1. Egg - 3 nos
  2. Cashew nuts - 1/2 cup
  3. Raisins - 1/4 cup
  4. Ghee - 1 tbsp
  5. Sugar - 3 tbsp
  6. Cardamom powder - 1/2 tsp
For Syrup
  1. Sugar - 1/4 cup
  2. Water - 1/4 cup
  3. Cardamom - 1 ( crushed)
  4. Lemon juice - 1/4 tsp
  5. Rose water - 1/4 tsp
Preparation

Pancake
  1. Take a bowl and add maida, egg, salt, and water.
  2. Beat it well using a hand mixer without forming lumps until we get a thin batter.
  3. Heat a pan and make pancakes of two different sizes.
  4. Big pancake with two ladlefuls of batter and small pancake with one ladleful of batter.
Filling
  1. Mix eggs, sugar, cardamom powder in a bowl.
  2. Heat a pan and melt ghee.
  3. Add cashews and fry it till light brown and then add raisins.
  4. Pour the egg mixture and scramble it well.
  5. The filling is ready.
Sugar syrup
  1. In a sauce pan,  take sugar and water.
  2. Melt the sugar in medium flame and add crushed cardamoms, rose water , lime juice.
  3. switch off the flame after 5 minutes.
Method
  1. Take the small sized pancake and place it on a plate.
  2. Add the egg filling in the center and fold it like a box.
  3. keep this aside.
  4. Take the big pancake and add egg filling on the middle of it.
  5. Place the small stuffed pancake made earlier on top of this and again fold it like a box.
  6. Make a cross cut on top of it and pour sugar syrup in it.
  7. Panineer petti is ready to serve.
