Sambar


Ingredients
  1. Toor dal - 3/4 cup
  2. Shallots - 6 (finely chopped)
  3. Tomato - 2 (sliced)
  4. Potato - 1 (cubed)
  5. Carrot - 1(cubed)
  6. Drumstick - 2 (cut lengthwise)
  7. Ladies finger - 2 (cut lengthwise)
  8. Yam - 1/2 cup (cubed)
  9. Pumpkin - 1/2 cup (cubed)
  10. Yellow cucumber - 1/2 cup (cubed)
  11. Tamarind pulp - 1/2 - 1 cup (adjust as per your taste)
  12. Sambar powder - 3 tbsp
  13. Asafoetida/ Hing - 3/4 tsp
  14. Red chilli - 2
  15. Mustard seeds - 1/4 tsp
  16. Curry leaves - 1 sprig
  17. Salt - to taste
  18. Oil - 2 tbsp
Preparation
  1. Mix dal, turmeric and water in pressure cooker and cook for 4 whistles.
  2. After the steam goes out, add potato, carrot, drumstick, yam, pumpkin, cucumber, salt, tamarind pulp.
  3. Cook until all vegetables are cooked or for 1 whistle.
  4.  Heat oil in a pan and splutter mustard seeds.
  5. Add curry leaves, sliced onion, red chillies, tomatoes, ladies finger and fry it for 2 minutes.
  6. Add sambar powder and stir it well till the raw smell goes.
  7. After 2 minutes, add the cooked vegetables and adjust water if the gravy is too thick.
  8. Switch off the flame and add hing .
  9. Serve hot with rice.
