Sambar
Ingredients
- Toor dal - 3/4 cup
- Shallots - 6 (finely chopped)
- Tomato - 2 (sliced)
- Potato - 1 (cubed)
- Carrot - 1(cubed)
- Drumstick - 2 (cut lengthwise)
- Ladies finger - 2 (cut lengthwise)
- Yam - 1/2 cup (cubed)
- Pumpkin - 1/2 cup (cubed)
- Yellow cucumber - 1/2 cup (cubed)
- Tamarind pulp - 1/2 - 1 cup (adjust as per your taste)
- Sambar powder - 3 tbsp
- Asafoetida/ Hing - 3/4 tsp
- Red chilli - 2
- Mustard seeds - 1/4 tsp
- Curry leaves - 1 sprig
- Salt - to taste
- Oil - 2 tbsp
Preparation
- Mix dal, turmeric and water in pressure cooker and cook for 4 whistles.
- After the steam goes out, add potato, carrot, drumstick, yam, pumpkin, cucumber, salt, tamarind pulp.
- Cook until all vegetables are cooked or for 1 whistle.
- Heat oil in a pan and splutter mustard seeds.
- Add curry leaves, sliced onion, red chillies, tomatoes, ladies finger and fry it for 2 minutes.
- Add sambar powder and stir it well till the raw smell goes.
- After 2 minutes, add the cooked vegetables and adjust water if the gravy is too thick.
- Switch off the flame and add hing .
- Serve hot with rice.
