Medu Vada


Ingredients

  1. Urad dal(Black gram) - 3 cups
  2. Fenugreek seeds - 2 tbsp
  3. Rice flour - 3 tbsp
  4. Black peppercorns -  1 tsp (crushed)
  5. Curry leaves - 1 sprig(finely chopped)
  6. Asafoetida - 1/4 tsp
  7. Baking soda - a pinch
  8. Salt - to taste
  9. Oil - for frying
Preparation
  1. Soak urad dal and fenugreek seeds for atleast one hour. Drain water and grind with little or no water.
  2. Add rice flour, pepper corns, curry leaves, asafoetida, salt, baking soda to the batter and mix well.
  3. Heat oil in a kadai and wet your palms to shape the vada by making a hole in the center.

  4. Drop this carefully into hot oil and fry on medium heat on both sides to get crispy vadas.
  5. Serve hot with idli, sambar and chutney.
