Potato Stew


Ingredients

  1. Potato - 4 nos (medium sized)
  2. Onion - 2 nos (medium sized)
  3. Ginger - 1/2 tsp (finely chopped)
  4. Green chillies - 2 nos
  5. Shallots - 1 tbsp (finely chopped)
  6. Salt - to taste
  7. Grated coconut - half of a coconut
  8. Cococut oil - 2 tbsp
  9. Curry leaves - 1 sprig
Preparation
  1. Cut potato into small cubes and add this to a pressure cooker.
  2. Add chopped onions, ginger pieces, green chillies, salt and 1&1/2 cups of water.
  3. Cook for 3 whistles.
  4. Extract coconut milk out of grated coconut by grinding this in mixer with little water.
  5. Add this coconut milk to the cooked potato mixture and let it boil.
  6. When it starts boiling, switch off the flame.Do not boil the curry for too long that ends up looking like it has curdled.
  7. Heat oil in a pan and add chopped shallots to this.
  8. Fry till it turns golden brown.Add curry leaves to this and switch off the flame.
  9. Garnish the stew with fried shallots and curry leaves.
  10. Serve with Idiyappam or Appam.
