Potato Stew
Ingredients
- Potato - 4 nos (medium sized)
- Onion - 2 nos (medium sized)
- Ginger - 1/2 tsp (finely chopped)
- Green chillies - 2 nos
- Shallots - 1 tbsp (finely chopped)
- Salt - to taste
- Grated coconut - half of a coconut
- Cococut oil - 2 tbsp
- Curry leaves - 1 sprig
Preparation
- Cut potato into small cubes and add this to a pressure cooker.
- Add chopped onions, ginger pieces, green chillies, salt and 1&1/2 cups of water.
- Cook for 3 whistles.
- Extract coconut milk out of grated coconut by grinding this in mixer with little water.
- Add this coconut milk to the cooked potato mixture and let it boil.
- When it starts boiling, switch off the flame.Do not boil the curry for too long that ends up looking like it has curdled.
- Heat oil in a pan and add chopped shallots to this.
- Fry till it turns golden brown.Add curry leaves to this and switch off the flame.
- Garnish the stew with fried shallots and curry leaves.
- Serve with Idiyappam or Appam.
