Pav Bhaji

Ingredients
  1. Potato - 2 nos
  2. Cauliflower - 1 cup 
  3. Cabbage - 3/4 cup
  4. Carrot - 1/2 cup
  5. Green peas - 1/2 cup
  6. Onion - 2 nos
  7. Tomato - 2 nos
  8. Ginger- garlic paste - 1 tbsp
  9. Capsicum - 1
  10. Pav bhaji masala powder - 3 tsp
  11. Garam masala - 1 tsp
  12. Red chilli powder - 1 tsp
  13. Salt - to taste
  14. Oil - 2 tbsp
  15. Coriander leaves - 2 tbsp
  16. Lemon juice - 1 tsp
  17. Butter - for serving + fry pav buns
  18. Pav Buns - 8 nos
Preparation
  1. Cut all vegetables into small pieces.
  2. Pressure cook potato, cauliflower, cabbage, carrot, greenpeas in two whistles with 1/2 cup water and salt.
  3. Heat oil in a pan and add chopped onions.
  4. After 2 minutes, add chopped tomatoes, ginger-garlic paste, capsicum and saute till it turns translucent.
  5. Add pav bhaji masala, garam masala, red chilli powder, salt and mix well.
  6. Add cooked vegetables, stir and cook for 2 minutes.
  7. Add 100 ml of water, mix and simmer stirring slowly for 5 to 7 minutes to get the desired thickness of the bhaji.
  8. Add butter, lemon juice and mix well.
  9. Heat tava, add 1 tbsp of butter and place halved pav buns over it.Shallow fry till both sides becomes light brown colour.
  10. Garnish with coriander leaves, green chilly and a blob of butter.
  11. Serve hot with butter roasted pav, slices onion and lemon pieces.
