Drumstick Stir Fry / Muringakka Thoran



Ingredients

  1. Drumstick / Muringakka - 4 nos (cut into lengthwise)
  2. Grated Coconut - half of a coconut
  3. Green chilies - 4 nos
  4. Shallots - 5 nos
  5. Garlic - 2 cloves
  6. Fennel seeds - a pinch
  7. Salt - to taste
  8. Turmeric powder - a pinch
  9. Coconut oil - 1 tbsp
  10. Mustard seeds - 1/2 Tsp
  11. Curry leaves - 1 stalk
Preparation
  1. Half cook drumstick pieces with turmeric, salt, and a little water.Keep this aside.
  2. Take coconut, green chilies, garlic, fennel seeds, shallots, salt in a jar and coarsely grind this mixture.
  3. Heat oil in a kadai and splutter mustard seeds and add curry leaves.
  4. Add coconut mixture along with half cooked drumstick pieces.
  5. Keep stirring till all the water is gone and dry.
  6. Serve hot with steamed rice.
