Ada Pradhaman

Ada Pradhaman is a  dessert that is made especially during Onam and Vishu. It is a traditional Kerala dessert with rice, jaggery and coconut milk. A variation of this dessert is Palada Pradhaman with milk and sugar instead of coconut milk and jaggery.


Ingredients
  1. Ribbon Ada - 200 g
  2. Coconut - 2 nos
  3. Jaggery - 500 g
  4. Ghee - 50 g
  5. Cardamom powder - 1/2 tsp
  6. Cumin seed powder - 1/2 tsp
  7. Cashew nut - 10 nos
  8. Raisins - 15 nos
Preparation
  1. Clean the ribbon Ada in water.No need to cut, roast or soak it in water.
  2. Grind coconut in three stages.
  3. First, remove the thick coconut milk out of it.
  4. Second milk can be removed  by adding a little water.
  5. Cook the ribbon Ada in third stage coconut milk.
  6. Make jaggery syrup by boiling jaggery in a 1/2 cup water.
  7. When the ribbon Ada gets cooked,  add jaggery syrup to this. 
  8. After boiling it for some time, add the second stage milk and cook till it becomes a thick liquid.
  9. Add cardamom powder and cumin seed powder. Dried ginger powder can also be added at this stage as required.
  10. Now add the first stage coconut milk after removing it from the stove and mix thoroughly.
  11. Heat ghee in a pan and roast cashew nuts, raisins.
  12. Add this to payasam.
  13. Ada pradhaman is ready to serve.
