Kadumanga Curry / Mango Curry

Ingredients

  1. Mango - 3 nos ( take raw mango )
  2. Fenugreek - 1/2 tsp
  3. Mustard seed - 2 tsp
  4. cumin seed - 1/2 tsp
  5. Turmeric powder - 1/2 tsp
  6. Kashmiri chilli powder - 2 tsp
  7. Sugar - 1 tsp
  8. Garlic - 3 cloves
  9. Ginger - small piece
  10. Onion - 1 (finely chopped)
  11. Green chilli - 3 nos
  12. Curry leaves - 1 tbsp
  13. Oil - 1 1/2 tbsp
  14. Asafoetida - a pinch
Preparation
  1. Cut the mango into long horizontal slices without peeling the skin.
  2. Place a Kadai on the flame and add oil.
  3. When the oil is hot, add mustard, fenugreek, cumin seeds, curry leaves.
  4. After 1 minute, add chopped onion, chopped ginger, garlic, green chillies and saute for 2 minutes.
  5. Now add turmeric powder, red chilli powder, salt, sugar and saute till the raw smell goes.
  6. Add one cup of water and close the Kadai with a lid.
  7. Let it cook for 10 - 15 minutes and reduce into a thick gravy.
  8. Switch off the flame and add asafoetida.
  9. Serve with plain rice.
