Vegetable Cutlet

Ingredients
  1. Potatoes - 6 nos
  2. French beans - 5 nos (finely chopped)
  3. Green peas - 1/2 cup
  4. Carrot - 1 medium (finely chopped)
  5. Sweet corn - 1/2 cup
  6. Onion - 2 nos (finely chopped)
  7. Green chillies - 1-2 (finely chopped)
  8. Ginger - garlic paste - 1 tbsp
  9. Cumin seeds - 1/2 tsp
  10. Red chilli powder - 1/2 tsp
  11. Turmeric powder - 1/4 tsp
  12. Garam masala - 1 tsp
  13. Pepper powder - 1/2 tsp
  14. Coriander leaves - 2 tbsp( chopped)
  15. All purpose flour - 2 tbsp
  16. Bread crumbs - 1 cup
  17. Salt - to taste
  18. Oil - for frying
Preparation
  1. Boil the potatoes and mash it.Keep this aside.
  2. Steam the vegetables by using a steamer.
  3. Heat oil in a pan and add cumin seeds.
  4. After few seconds, add ginger - garlic paste, onion, green chillies.
  5. Saute this for 2 minutes.
  6. Add  all powders and saute till the raw smell goes.
  7. Add steamed vegetables, salt and mix it well.
  8. Take mashed potatoes in a deep bowl.Add the vegetable mixture, coriander leaves and mix well.
  9. In another small bowl, take 2 tbsp of maida and 3 tbsp of water.Add more water if required to get a thick flowing consistency without any lumps.
  10. Shape the cutlet with your palms or with any cutlet moulds.
  11. Dip in the maida paste gently and coats the paste evenly all over the cutlets.
  12. Coat the cutlet by rolling this in bread crumbs.
  13. Heat sufficient oil in a pan and place the cutlet.
  14. Deep fry till both sides are evenly done.
  15. Similarly, prepare more cutlets and place on an absorbent paper.
  16. Seve hot with tomato ketchup.
