Pani Puri || Golgappas


Pani puri also called Golgappa, phuchka is the most sought after street food in Mumbai. This has gained a general approval from all parts of the world regardless of its origin. At a pani puri stall, we can see  rich people to join the queue alongside the cities poorest. Ingredients


  •  Puris - 15 nos (store bought)

For Pani
  1. Ice water - 500 litre
  2. Green chutney 1/2 cup
  3. Sweet tamarind chutney - 1/4 cup
  4. Black salt - 1 tsp
  5. Chaat masala powder - 1 tsp
  6. Cumin powder (jeera powder) - 1 tsp
  7. Boondi - 1/2 cup
For filling
  1. Potatoes - 3 nos
  2. Onion - 1 no (finely chopped)
  3. Coriander leaves - as needed (finely chopped)
  4. Cumin powder (Jeera powder) - 1/2 tsp
  5. Red Chilli powder - 1/2 tsp
  6. Chaat masala - a pinch
  7. Dried yellow peas - 3/4 cup
  8. Black salt - 1/2 tsp
  9. Turmeric - a pinch
  10. Salt - to taste
Preparation

For Pani
  1. Take ice cold water in a bowl and mix all ingredients from green chutney to cumin powder.
  2. We can adjust the measurement of chutney and spice powders according to our taste.
  3. Keep this in a refrigerator for one hour to get the flavours blended well with pani.
  4. Add boondi to this pani.
  5. Pani is ready.
For Filling
  1. Soak dried peas for 5 to 6 hours in lukewarm water. Pick and remove any hard beans. Pressure cook properly soaked peas with turmeric, salt until soft and tender.
  2. Boil potatoes and mash it well.
  3. Add cumin powder, red chilli powder, black salt, coriander leaves, onion and mix well with potatoes. 
  4. Keep this filling aside.

How to serve
  1. Take a poori and make a hole in the centre big enough to add the fillings.
  2. Fill the poori with potato mix and top with cooked yellow peas.
  3. Pour the pani and eat the whole puri with stuffing.
  4. Enjoy your homemade Pani Puri.
