Pani Puri || Golgappas
Pani puri also called Golgappa, phuchka is the most sought after street food in Mumbai. This has gained a general approval from all parts of the world regardless of its origin. At a pani puri stall, we can see rich people to join the queue alongside the cities poorest. Ingredients
- Puris - 15 nos (store bought)
For Pani
- Ice water - 500 litre
- Green chutney 1/2 cup
- Sweet tamarind chutney - 1/4 cup
- Black salt - 1 tsp
- Chaat masala powder - 1 tsp
- Cumin powder (jeera powder) - 1 tsp
- Boondi - 1/2 cup
For filling
- Potatoes - 3 nos
- Onion - 1 no (finely chopped)
- Coriander leaves - as needed (finely chopped)
- Cumin powder (Jeera powder) - 1/2 tsp
- Red Chilli powder - 1/2 tsp
- Chaat masala - a pinch
- Dried yellow peas - 3/4 cup
- Black salt - 1/2 tsp
- Turmeric - a pinch
- Salt - to taste
Preparation
For Pani
- Take ice cold water in a bowl and mix all ingredients from green chutney to cumin powder.
- We can adjust the measurement of chutney and spice powders according to our taste.
- Keep this in a refrigerator for one hour to get the flavours blended well with pani.
- Add boondi to this pani.
- Pani is ready.
For Filling
- Soak dried peas for 5 to 6 hours in lukewarm water. Pick and remove any hard beans. Pressure cook properly soaked peas with turmeric, salt until soft and tender.
- Boil potatoes and mash it well.
- Add cumin powder, red chilli powder, black salt, coriander leaves, onion and mix well with potatoes.
- Keep this filling aside.
How to serve
- Take a poori and make a hole in the centre big enough to add the fillings.
- Fill the poori with potato mix and top with cooked yellow peas.
- Pour the pani and eat the whole puri with stuffing.
- Enjoy your homemade Pani Puri.
