Sweet Tamarind Chutney
Sweet tamarind chutneys are something we cannot avoid while making chaat recipes. This has a long shelf life and can be stored in air tight containers for 2 months  in refrigerator. It can also be served with samosas, pakoras, parathas and chaat.

Ingredients
  1. Deseeded dates - 7 nos
  2. Tamarind  - Lemon size
  3. Grated Jaggery - 1/4 cup
  4. Red chilli powder - 1/2 Tbsp
  5. Cumin seed powder / Jeera powder - 1/4 Tsp
  6. Dry ginger powder or ginger - 1/4 tsp 
  7. Salt - To taste
Preparation

  1. Soak 50 gms tamarind in warm water.
  2. In a pan boil jaggery, tamarind pulp and dates together with just enough water.
  3. Add all the powders and mix well on a medium flame until it reaches a saucy consistency.
  4. Mash it well with a potato masher.
  5. Allow it to cool and strain using a soup strainer to get all the pulp out of it.
  6. We can store this in a airtight container in the refrigerator and use it for 15-20 days.
  7. Best chutney for chaat recipes.
