Sardine Dry Roast / Mathi Vattichathu

This is a popular recipe of Kerala which is made by cooking the fish in an earthen pot with spicy masala. The spicy masala is a combination of shallots, green chillies, ginger-garlic paste and spice powders. My hubby's all-time favourite is Paratha with fish curry. When you visit Kerala, don't leave without trying this combination.Try this traditional Kerala fish curry at home!!


Ingredients
  1. Sardine - 1/2 Kilo
  2. Garlic - 1 pod
  3. Ginger - 3 small pieces
  4. Green chilli - 3 nos
  5. Shallots - 10 nos
  6. Tomato - 2 nos
  7. Tamarind - lemon sized
  8. Kashmiri chilli powder - 2 tbsp
  9. Turmeric - 1/2 tsp
  10. Pepper powder - 1/4 tsp
  11. Cumin seed powder - 1/4 tsp
  12. Salt - to taste
  13. Fenugreek seeds - 1/2 tsp
  14. Curry leaves - 2 sprigs
  15. Coconut Oil - 2 tbsp
Preparation
  1. Soak tamarind in little water and extract the pulp.
  2. Grind ginger, garlic, shallots, green chillies, curry leaves(1 sprig) to a smooth paste.
  3. Take a bowl and add chilli powder, salt, turmeric powder, pepper powder, jeera powder, fenugreek seeds.
  4. Add chopped tomatoes, ground masala, tamarind pulp to this bowl and mix well with the hand.
  5. Clean the fish and slash it to penetrate masala deep into the fish.
  6. Spread the masala all over and inside the fish, keep this aside.
  7. Take an earthen pot (Matki / Mann chatti) and keep on the flame.
  8. Add coconut oil and swirl a little to get the oil around the pot.
  9. Spread spoon some masala in the bottom and lay the fish on top of this with rest of the masala.
  10. Add curry leaves and one green chilly on top of this.
  11. Cover the pot with a lid and cook on low flame for 20 minutes.
  12. Serve hot with steamed rice or paratha.
