Jackfruit Fritters



Ingredients
  1.  Ripe jackfruits - 8 nos
  2. All purpose flour / Maida - 3/4 cup
  3. Rice flour - 2 tbsp
  4. Sugar - 3 tbsp
  5. Baking soda / Cooking soda - 1/4 tsp
  6. Cardamom powder / Elakai podi  - 1 tsp
  7. Turmeric powder - a pinch (optional)
  8. Water as needed
  9. Oil - for frying
Preparation
  1. Deseed the ripe jackfruits and cut it in lengthwise.
  2. In a bowl, take maida, rice flour, sugar, baking soda, cardamom powder and turmeric powder.
  3. Blend it nicely into a smooth thick batter by adding necessary water.
  4. Heat oil for deep frying.
  5. Dip the jackfruit pieces in the batter and evenly coat them.
  6. Drop it in hot oil and fry the batter coated jackfruit pieces by turning both sides until golden brown.
  7. Keep the fried jackfruit pieces on a paper towel for draining excess oil.
  8. Serve hot with a cup of hot tea.
