Long Beans Stir Fry / Payar Mezhukkupuratti



Ingredients
  1. Long beans - 15 beans
  2. Shallots or onion - 6 nos/ 1 (chopped)
  3. Coconut grated - 1/4 cup
  4. Turmeric powder - 1/4 Tsp
  5. Chilli powder - 1/2 Tsp
  6. Mustard seeds - 1/4 Tsp
  7. Dried red chillies - 2 nos
  8. Curry leaves - 1 sprig
  9. Coconut oil - 2 Tbsp
Preparation
  1. Cut the long beans into small pieces.
  2. Heat a wok and add 1 1/2 tbsp of coconut oil. Splutter mustard seeds and add curry leaves and crushed red chillies.
  3. Add chopped shallots, salt, and stir fry till it turns translucent.
  4. Add chilli powder, turmeric powder and saute for a minute.
  5. Add cut long beans, salt and sprinkle some water.
  6. Mix well and cook covered till the beans become tender.
  7. Add grated coconut, stir fry till the coconut turns golden in colour.
  8. Drizzle half  Tbsp of coconut oil and stir fry for a couple of minutes.
  9. Serve hot with rice or chapati.
