Olan || Onam special || ഓലൻ




Ingredients
  1. Ash gourd - 1 cup
  2. Pumpkin - 1 cup
  3. Black eyed peas (cow peas) - 1/4 cup
  4. Thick coconut milk - 1/2 cup
  5. Thin coconut milk - 1 cup
  6. Green chillies - 4 nos (slit)
  7. Coconut oil - 1 Tsp
  8. Curry leaves - few
  9. Salt - to taste
Preparation
  1. Pressure cook black eyed peas with 1 cup of water for 5 whistles.
  2. Extract thick coconut milk from half a coconut by grinding it with 1/4 cup of water.
  3. Get thin coconut milk by grinding the same coconut using 1 cup of water.
  4. Cook ash gourd and pumpkin with 1 cup of thin coconut milk.
  5. After 8 minutes, when its cooked properly add thick coconut milk and cooked cow peas.
  6. Temper with 1 Tsp of coconut oil and curry leaves.
  7. Serves best with rice.
