Aviyal || Onam Special Recipe || Mixed Vegetable Dish



Ingredients
  1. Elephant yam / chena        -   50 g
  2. Carrot                                 -  50 g
  3. Drumstick / muringakka    -  50 g
  4. Raw plantain                      -  50 g
  5. snake gourd                        -  50 g
  6. Golden cucumber               -  50 g
  7. Pumpkin                             -  50 g
  8. Turmeric powder                - ¼ tsp
  9. Coconut                              - 1 cup(grated)
  10. Shallots                               - 2 nos 
  11. Green chilly                        - 2-3
  12. Cumin seeds                       - 1/4 Tsp
  13. Water                                  - 1/4 cup
  14. Yogurt                                 - 1/2 cup, beaten
  15. Coconut oil                         - 1 tsp
  16. Salt                                     - to taste
  17. Curry leaves                       - for garnishing
Preparation
  1. Cut the vegetables lengthwise and cook with turmeric powder, salt and quarter cup of water.
  2. Grind together coconut , green chillies, shallots, garlic,cumin seeds and keep aside.
  3. when the veggies are 3/4 cooked, add ground coconut and mix well.
  4. Cover and cook until the veggies are done and the raw taste of coconut paste has gone.
  5. Add yoghurt and mix well.cook for another 2 minutes on a low flame.
  6. Remove from heat and add coconut oil and curry leaves.
  7. Serve hot with rice.
