Fresh Fruit Cake


Ingredients
  1. Eggs                        -  4 nos
  2. vanilla essence        - 1 tsp
  3. Sugar                       - 5 tbsp
  4. Flour                        -  8 tbsp
Preparation

  • Cream the sugar and the eggs together till fluffy, add Vanilla essence and continue to beat.
  • Sieve the Flour.
  • Add the flour slowly and fold in till incorporated.
  • Pour in a lined tin and bake in a preheated oven at 150 degree centigrade for 35 minutes.
  • Let the cake cool and then we have to do the icing.
For Icing
  1. whipping cream                           -  600 ml
  2. Fresh Fruits of Your Choice         - 125 g
  3. sugar syrup                                  -  1/2 cup
  4. Pineapple essence                       -  1tsp

  • Slice the cake horizontally into 2 or 3 layers
  • Place the first layer on the board and sprinkle sugar syrup on to moisten the cake
  • Beat the whipping cream with pineapple essence.
  • Put the whipped cream on the first layer and spread it evenly.
  • Place some fresh fruits on top of it.
  • Repeat the same with next layer and cover with the top layer.
  • Spread cream and cover evenly the top and the sides of the cake with cream.
  • Decorate with remaining fresh fruit pieces.
  • Chill for 1hr before serving.
