Squid Roast (koonthal / Kanava / Calamari Roast)

Koonthal or Kanava is one of the favourite fish of seafood lovers around the world. The rich proteins, vitamins and mineral content in squid make them healthy too. Koonthal is called Squid in English and when it considered in continental style, it is called Calamari which is an Italian name. Like other fishes, we can make various dishes with this. Koonthal roast is the best in those. I prefer to make roast whenever I get good prawns, squid or mussels (Kallummakkaya). The gravy of this dish is so good with anything like rice, chapati or any sort of bread. 

Ingredients
  1. Squid                             -  1/2 kilo ( can cut in any desired shape, here i cut it into rings)
  2. Shallots                          -  1 cup
  3. Ginger-garlic  paste       -  2 tbsp
  4. Red chilli powder          -  1/2 tbsp or as per your spice level
  5. Black pepper powder     -  1/4 tbsp 
  6. Turmeric powder           -  1/2 tsp
  7. Cumin seed powder       -  1/4 tsp
  8. Coriander powder          -  1 tbsp
  9. Water                              -  2 cups
  10. Salt                                 -  to taste
  11. Coconut oil                     -   3 tbsp
  12. Curry leaves                    -   1 sprig
Preparation
  1. Clean and cut the squid into rings and put that in a kadai.These ring shape will make children get attracted to have it.
  2. Grind shallots into paste and add all the ingredients except oil and curry leaves.
  3. Place the kadai on flame and close it with a lid.cook until the squid is done by adding more water if needed.
  4. When the water has reduced and the masala thickens, add coconut oil and curry leaves.
  5. Roast it for 5 minutes on medium flame.Add more oil if needed.
  6. Squid roast is ready.Serve with steamed rice, chapati or Appam.
