Cheera Thoran / Spinach stir fry



Ingredients

  1. Cheera (spinach) - 5 cups
  2. Shallots - 5 nos
  3. Garlic - 2 cloves
  4. Green chillies - 2 nos
  5. Grated coconut - 2 cups
  6. Mustard seeds - 1/4 tsp
  7. Salt - to taste
  8. Coconut oil - 1 tbsp
  9. Curry leaves - 1 sprig
Preparation
  1. Clean spinach and chop it finely.
  2. Grind grated coconut, shallots, garlic, green chillies, curry leaves, salt in a mixer jar.
  3. Do not grind into a coarse form.
  4. Heat oil in a pan and splutter mustard seeds.
  5. Add coconut mixture along with spinach and adjust salt.
  6. Cover this with a lid and let it cook for another 3 minutes on a low flame.
  7. Make sure not to overcook this as this will lose the green colour and taste of spinach.
  8. Serve with rice.
