Cheera Thoran / Spinach stir fry
Ingredients
- Cheera (spinach) - 5 cups
- Shallots - 5 nos
- Garlic - 2 cloves
- Green chillies - 2 nos
- Grated coconut - 2 cups
- Mustard seeds - 1/4 tsp
- Salt - to taste
- Coconut oil - 1 tbsp
- Curry leaves - 1 sprig
- Clean spinach and chop it finely.
- Grind grated coconut, shallots, garlic, green chillies, curry leaves, salt in a mixer jar.
- Do not grind into a coarse form.
- Heat oil in a pan and splutter mustard seeds.
- Add coconut mixture along with spinach and adjust salt.
- Cover this with a lid and let it cook for another 3 minutes on a low flame.
- Make sure not to overcook this as this will lose the green colour and taste of spinach.
- Serve with rice.
