Koorka Upperi / Chinese potato stir fry


Ingredients
  1. Chinese potato / koorka - 500 g
  2. Shallots - 8 nos
  3. Garlic - 3 cloves
  4. Dried Red chilli - 3 nos
  5. Mustard - seeds - 1/4 tsp
  6. Salt - to taste
  7. Coconut oil - 1 tbsp
  8. Curry leaves - 1 sprig
Preparation
  1. Clean potatoes and cut into small pieces.
  2. Cook this with salt and enough water to cover it.
  3. Please take care not to overcook.
  4. Drain excess water and keep this aside.
  5. Crush shallots, garlic, red chillies.
  6. Heat oil in a pan and crack mustard seeds.
  7. Add curry leaves and crushed shallots-garlic-red chillies.
  8. Saute this till the raw smell goes.
  9. Add cooked potatoes and stir well for 3 minutes.
  10. Koorka upperi is ready to serve with rice.
