Koorka Upperi / Chinese potato stir fry
Ingredients
- Chinese potato / koorka - 500 g
- Shallots - 8 nos
- Garlic - 3 cloves
- Dried Red chilli - 3 nos
- Mustard - seeds - 1/4 tsp
- Salt - to taste
- Coconut oil - 1 tbsp
- Curry leaves - 1 sprig
Preparation
- Clean potatoes and cut into small pieces.
- Cook this with salt and enough water to cover it.
- Please take care not to overcook.
- Drain excess water and keep this aside.
- Crush shallots, garlic, red chillies.
- Heat oil in a pan and crack mustard seeds.
- Add curry leaves and crushed shallots-garlic-red chillies.
- Saute this till the raw smell goes.
- Add cooked potatoes and stir well for 3 minutes.
- Koorka upperi is ready to serve with rice.
