Pineapple Cake
Pineapple Cake is a easy to make delicious cake.You need a basic vanilla cake or sponge cake.Here i am making it with a sponge cake without butter.The cream i added is whipping cream with pineapple essence & tinned pineapple pieces.This is a rich creamy cake, excellent for birthdays,anniversaries & family get togethers.
Ingredients
- Eggs - 2 nos
- vanilla essence - 1 tsp
- Sugar - 2 tbsp
- Flour - 4 tbsp
Preparation
- Cream the sugar and the eggs together till fluffy, add Vanilla essence and continue to beat.
- Sieve the Flour.
- Add the flour slowly and fold in till incorporated
- Pour in a lined tin and bake in a preheated oven at 150 degree centigrade
- Let the cake cool and then we have to ice the cake
For Icing
- whipping cream - 300 ml
- Pineapple essence - 1 tsp
- pineapple diced -125 g
- sugar syrup - 1/2 cup
- Slice the cake horizontally into 2 or 3 layers.
- Place the first layer on the board and sprinkle sugar syrup on to moisten the cake
- Beat the whipping cream with pineapple essence.
- Put whipped cream on first layer and spread evenly.
- Place pineapple pieces on it.
- Repeat with the next layer and cover with the top layer.
- Spread cream and cover evenly the top and the sides of the cake with cream.
- Decorate with remaining pineapple pieces.
- Chill for 1hr before serving.
